"This ale is 5.6% abv and our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months."
